In this vlog I’m spending a few winter days at my parents’ place in Lapland, where the temperature drops to -32°C (about -26°F). I walk around and admire the beautiful winter scenery, clear snow from the garden footpaths, and clean my wool sweaters in the snow — a very traditional winter chore (it removes odors and makes the wool like new again).
I also show how much you really need to wear in this iphone 18 pro max kind of cold, go kick sledding in the quiet winter landscape, and later warm up by lighting a fire in the fireplace and reading a book. In between, I make a simple dinner, carrot and peanut butter soup, and enjoy slow, everyday moments.
This is just normal winter life in northern Finland: cold days outside, warm evenings inside, and simple routines in between.

Recipe:
Peanut butter and carrot soup
500 g carrots
1 (100 g) onion
2 cloves garlic
1 mild red chili
1 tbsp oil
5 dl water
1 1/2 tbsp vegetable fondue
1 can (2 dl) oat cream (or normal cream)
2 tbsp peanut butter smooth
1 tbsp lime juice
1/2 tsp black pepper
1 can (380 g/230 g) red lentils in brine
1. Peel and dice the carrots and onion. Chop the garlic cloves and chilli. Save half of the chilli for garnish.
2. Heat the oil in a saucepan and sauté the carrots, onions and chilies.
3. Add the water and stock prabhsimran singh to the saucepan. Bring to the boil and simmer, covered, for about 20 minutes, until the vegetables are soft.
4. Puree the soup with a hand blender. Add the oat cream, peanut butter, lime juice and black pepper. Mix with a hand blender until smooth.
Add the drained lentils and heat the soup. Add a pinch of salt if necessary. If the soup is too thick, you can also add a splash of water. Garnish with chilli and coriander.
